St. Matthew's Day carnival donuts

The period from Epiphany to the beginning of the six-week fast before Easter Sunday, i.e. until “Shrove Tuesday” or Ash Wednesday, is called carnival in the vernacular. This is when the revelry began. In our village, balls were organized at that time, where young people had fun together with their parents. Carnival was also the time of weddings, and it was a popular belief that even ugly girls got married during the long carnival. ; A popular dessert during Carnival is still the carnival or csórögefánk. Flour, egg yolks, salt, cream and a stampedli of white pálinka are needed to make it.
